Chorizo Red Wine Reduction
Ingredients:

- 220g Chorizo
- 10ml Red Wine
- 5ml Worcestershire Sauce
- 25ml Balsamic Vinegar
- 20ml White Wine Vinegar
- 25g Light Brown Sugar
Method:

- Cook the Chorizo on a medium heat until its got a little colour.
- Add in the rest of the ingredients, bring to the boil before reducing by half.
- Season once the sauce has thickened and enjoy with bread to dip.
Salt & Pepper Padron

- Pan fry Padron Peppers until they are starting to soften.
- Transfer Peppers to a mixing bowl and season to taste with Salt and Pepper Seasoning.

- 1 tbsp Sugar
- 1 tbsp Salt
- 1 tbsp Thai 7 Spice
- 1 tsp Ground Black Pepper
- 1 tsp Ground Ginger
- 1 tsp Garlic Powder
