Ingredients: 125g Plain Flour 75g Salted Butter (softened) 70g Mature Cheddar (grated) 1 Egg Yolk Pinch Cayenne Pinch Salt 4 balls of frozen Spinach (defrosted, juice squeezed out and finely chopped) Method: Work the Butter and Flour between your finger tips until they look like breadcrumbs Add in the rest of the ingredients and mix well until a dough is formed Roll out the dough until its the thickness of a pound coin Either cut into thin strips, bring together in threes and plait Place on a silicon lined tray and bake for 14 minutes at 200 Once cooked leave to cool for 5 minutes before eating

Pea & Parsley patties
Ingredients: 100g frozen peas (pour some boiling water and soak for 5-7 minutes 10g parsely finely chopped 2 garlic cloves minced 2 Shallots finely chopped 50g yoghurt 70g self raising flour 150 mushy peas @bachelors 25g Breadcrumbs 25g grated cheese Oil for cooking Half tsp garam masala (Optional) Method: In a pan heat some oil on low heat Add all ingredients to a bowl and mix well The mixture will be slightly sticky, make golf size balls pressing a little and place them into the oil After 1 minute, press down slightly with a spatula Cook both sides until nice and golden Serve immediately with a mint yoghurt dip, sour cream or a chilli sauce!

Chorizo Red Wine Reduction Ingredients: 220g Chorizo 10ml Red Wine 5ml Worcestershire Sauce 25ml Balsamic Vinegar 20ml White Wine Vinegar 25g Light Brown Sugar Method: Cook the Chorizo on a medium heat until its got a little colour.
